AEF technology A new way to preserve vegetables Shelfer, LLC

The problem with conventional freezing Conventionally frozen products are perishable, their cell structure is damaged, during further storage products lose moisture and become frosted outside. Rapid freezing (including the IQF system) has the same problems As a result, conventionally frozen products have different taste and structure than fresh produce. After 1-2 month of storage, product quality significantly deteriorates due to ice self-creation from glass-type water inside the product. Acoustic Extra Freezing (AEF) During the AEF process, acoustic waves create millions of microscopic ice crystals which are significantly smaller than cell size. As a result, cell structure remains intact. The technology was initially used only for freezing produce for spaceships and submarines in order preserve the original quality of vegetables. The AEF products are made available for households and HoReCa businesses. The quality and taste of AEF products is almost identical to fresh ones while the price is almost the same as for conventionally frozen products. AEF method allows to keep the product’s cells undamaged (photo under microscope)

Conventionally frozen potato slices Conventionally, potato slices are pre-fried in vegetable oil during production. This is done because shock freezing destroys the product’s structure, and in order to prevent it from falling apart, potato slices are enclosed in a "cocoon" of fried crust. As a result, ordinary store-bought slices are not suitable for boiling and should not be defrosted before cooking.

Purchase your own AEF system The AEF system can be installed inside existing quick-freeze cameras or as a separate module. The AEF system’s price starts from 70 000 USD (without the freezer system). Freezer system cost nearly 150 000 USD can be used one of existing or produced new one. For this money AEF system can freeze 5000 – 6000 kilo different food. AEF vegetables are already available in stores like Metro C&C Fully tested, approved trademark for HoReCa AEF freezed vegatables must be cooked from frozen form. AEF fish and meet can be defrosted and used or solded in retail as fresh, because quality of this type of product stay not changed during warming.
