3 CURRENT IMPORTANCE OF SOYBEANS In 2011 the U.S. grew 33% of the world ’ s soybeans. Soybeans are the second largest crop in the U.S., behind corn. U.S. currently produces more than 15,000 varieties of soybeans

4 IMPORTANCE OF SOYBEANS IN ILLINOIS IMPORTANCE OF SOYBEANS IN ILLINOIS Illinois ranks second in the production of soybeans, Iowa ranks first. 416.42 million bushels of soybeans were produced in Illinois in 2011. 33% of all cash farm income comes from soybeans.

5 SOYBEANS GROWING ON AN AREA FARM Most area grain farms contain 500 to to 3000 acres of land averaging 51.5 bushels per acre of soybeans grown.

6 SOYBEANS ARE STORED, DRIED AND SOLD AT A LOCAL GRAIN ELEVATOR Farmers bring their grain for storage to grain elevators

7 SOYBEANS MUST BE EXAMINED AND ANALIZED AT GRAIN ELEVATORS BEFORE SELLING

8 SOYBEANS FROM AREA FARMS ARE TRANSPORTED ALL OVER THE WORLD Many soybeans in this area are loaded on barges on the Mississippi River. Each barge holds 1500 tons of grain.

9 NUTRITIONAL IMPORTANCE OF SOYBEANS Soybeans are the richest source of isoflavones. Isoflavones are a plant chemical that helps protect against heart disease and certain types of cancer. Soybeans are rich in protein. The beans provide all the essential amino acids the body needs.

10 NUTRITIONAL IMPORTANCE OF SOYBEAN OIL Soybean oil is an all vegetable oil that is cholesterol-free Soybeans are low in saturated fat and high in polyunsaturated fat. Soybean oil contains a blend of two types of fatty acids that are high in omega 3 and omega 6. These fatty acids have been shown to reduce the risk of heart disease.

11 NUTRITIONAL VALUE OF SOY FLOUR Soy flour and textured soy products are rich in fiber, folate and iron. Soy flour is three times higher in protein than whole-wheat flour. SS.

12 NUTRITIONAL VALUE OF SOY MILK Soy milk is lactose-free and often used by people who can not tolerate cow ’ s milk

13 OTHER ADVANTAGES OF SOYBEAN OIL Soybean oil is light in flavor and has no odor. Soy oil has a high boiling point of 440 degrees, so it produces little smoke when cooking. Soy oil is very popular and readily available. Even HyVee doughnuts are fried in soybean oil.

14 A VARIETY OF FOODS CONTAIN SOY: Baby foods are fortified with soy products. Frozen yogurt, uses full-fat soy flour to reduce the amount of saturated fat. About 90% of all margarine contains soybean oil.

15 OTHER FOODS THAT CONTAIN SOY Milk chocolate candy contains soy lecithin to keep milk and chocolate from separating. Pet food for kittens. Soybean meal makes kitten food more nutritious and easier to digest. Soy beans are available as frozen “ sweet beans or canned beans.

16 MORE FOODS THAT CONTAIN SOY Soy nuts come salted and roasted or may have candy coating Soy sauce Miso - a bean paste is fermented soybeans

17 EVEN MORE SOY FOODS Textured vegetable protein is a soy product available in dry of frozen form to replace or extend ground meat

18 TOFU IS SOYBEAN CURD Tofu is made by cooking crushed soybeans with water and coagulating the fresh hot soy milk.

19 TOFU IS AVAILABLE IN 3 CONSISTENCIES EXTRA FIRMFIRM SOFT

20 TOFU IS VERY VERSATILE Fudge, lasagna and chocolate silk pie made with tofu tasted great

21 THE PRIMARY FOOD USE OF SOYBEANS Most of the soybeans grown in this area are ground up to use as food for livestock including cattle, hogs and chicken.
