2 2 Cicognola farm : general information WHAT IS CICOGNOLA FARM? Since more than 30 years the Biocchetti family is active in farming sector and more specifically in animal husbandry. The farm has a beautiful location on the hills, in an uncontaminated area, in the municipality of Perugia, in the green heart of Italy. It has 60 hectares, cultivated with crops, legumes and fodder for feeding bovine, swine and ovine races and rabbits. 3 3 Cicognola farms : animal breedings Bovine: Piedmontese race. stable (winter) and grazing (spring, summer and fall) Characteristics: low fat cholesterol meat Feeding: cereals, legumes and fodder from the farm Slaughtering: 13-16 months Ovine: Appennine race. Stable (winter) and grazing (spring, summer and fall) Characteristics: low fat meat Feeding: fresh fodder, wheat, barley and field bean Slaughtering: 30/35 kilos Swine: Large white, Duroc. Stable (winter) and fence area (spring, summer and fall) Characteristics: low fat meat Feeding: barley, corn, wheat and field bean Slaughtering: 110/120 kilos Rabbit: New Zealand race. Large cages (traditional method) and fence area Characteristics: low fat meat Feeding: dry fodder and pellets Slaughtering: given back from agistment after fattening

4 4 Cicognola farm : meat dissecting and processiong Processing at farm The only meat for sale is completely grown at farm. A safe and traceable process is managed and administrated according to the HACCP rules. At farm is possible to buy all kind of meat cut dissected at farm. Processing at farm The dissecting and processing equipment are stainless steel. The lots are traceable with reference to date and slaughtered animal. Processed specialties: rabbit hamburgers, rabbit roll, swine sausages, swine liver, swine “cotechino”, etc. WHAT IS INNOVATIVE : complete internal breeding and processing cycle; sale at farm traditional recipes -off-meeting - Perugia – Cia Umbria Office 06/12/2013

5 5 Common Agricultural Policy : animal welfare for a more sustainable and competitive EU agriculture The EU’s new Strategy for the Protection and Welfare of Animals for 2012–2015 represents an important step toward further improving the EU’s already high welfare standards and practices. It focuses on enhancing knowledge among the many key agencies, organizations and individuals who are involved in the process. It will also work to improve the competitiveness of European agricultural products by ensuring that markets and consumers recognize animal welfare as an added value. “I think using animals for food is an ethical thing to do, but we've got to do it right. We've got to give those animals a decent life and we've got to give them a painless death.
