Temperature Enzyme activity has temp. optimum; sharp declines at lower and higher temp.. Reaction rates initially increase with temperature Enzyme activity decreases at temperatures high enough to cause “denaturation; unfolding of protein structure and loss of proper conformation for catalysis.
