Method: For the shortbread base: Rub the butter into the flour and caster sugar until the mixture resembles fine breadcrumbs, then knead the mixture till it forms a dough, then press into the base, prick lightly and bake at 180 'c for around 20mins or until firm to touch and very lightly browned, cool. For the caramel: Boil the unopened times of condensed milk (with the labels removed to avoid mess) in water for 2.5-3 hours, topping up with water as necessary. Leave to cool, overnight if you can. Open tins and spread over shortbread. For the chocolate topping: Melt the chocolate slowly in a bowl over a pan of hot water. Pour over the cold caramel to set. Cut into squares or bars. Ingredients: For the shortbread: 250g Plain flour 75g caster sugar 175g butter For the caramel: 2 tins of condensed milk 397g For the chocolate topping: 200g Milk chocolate You will need 13" by 9" Swiss roll tin
