11 Food Service Commercial is food establishments that make money such as restaurants and concessions. Non-commercial is a secondary business to the specific business of a location: hospital, schools, prisons, business and industry cafeterias

12 What does ethics mean? Ethics: Following principles of proper conduct, professionalism, honesty, and integrity. Page 390-391

13 What areas in the industry pose concern for ethical behavior?

14 Ethical areas confidentiality, travel benefits, misrepresentation particularly in advertising, ticketing, reservations, selecting suppliers fiduciary; this involves how the client’s money is handled once it is in your possession. Page 390-394
