1. Once again the Ambassadors gathered at Epworth by the Sea on St. Simons Island for a great week of fellowship. The 22 nd annual retreat was a huge success and enjoyed by the 196 attendees. 7. How many trips did you make to the Ellie Room? How many of the treats featured in the Senior Citizen in the last year have you tried? Columbus White Trash Party Mix 2 cups Rice Chex 2 cups Wheat Chex 2 cups Corn Chex 2 cups bow tie pretzels 2 cups peanuts 8 oz. white chocolate, broken into pieces In a large bowl, mix Rice, Wheat and Corn Chex, pretzels and nuts. Set aside. In a microwave-safe bowl, melt the white chocolate, stirring every 30 seconds (it keeps its shape until stirred). Pour over dry mixture and stir to coat well. Line a countertop with wax paper and pour mixture out. Spread evenly and thinly so it will set and dry quickly. Separate into pieces and serve, or store in airtight container. Golden Isles Oatmeal Spice Cookie Preheat oven to 350 degrees 1 ½ cups plain flour 1 teaspoon cinnamon 1/2 teaspoon salt 1/2 teaspoon baking soda 1/2 teaspoon ground ginger 1/4 teaspoon allspice 1/8 teaspoon cloves Measure and mix together the above ingredients. Set aside. 1 cup softened butter 1 (16 oz.) pkg. dark brown sugar 2 large eggs 1 teaspoon vanilla Beat together butter and sugar until light and fluffy. Add eggs and vanilla. Blend in well. Gradually add flour mix at low speed. 3 cups of quick oats 1 cup of chopped pecans 1 cup of white chocolate chips 5 oz. bag of dried sweetened cranberries Stir above ingredients into batter. Drop by ice scoop onto parchment lined cookie sheets. Bake at 350 for 12-14 minutes. Cookies should not be brown around the edges and center will not look quite done. Cool in baking sheet for 15 minutes then remove to cooling racks to cool completely. Columbus Lemon Cookies 1 box Duncan Hines Deluxe Cake Mix 2 eggs 1 tsp. grated lemon rind or 2 tablespoons lemon juice ½ cup canola oil (or vegetable oil) Mix all above well. Spoon onto an ungreased cookie sheet. I use a melon ball spoon. Bake at 350 degrees for 10-12 minutes. Yields 60-70 cookies.
