The chemistry of it gets a bit complicated, but basically it is a battle the starch which is trying to turn the iodine blue, and the Vitamin C which is keeping it from turning blue. Eventually the Vitamin C loses and, bam! - you get instant blueness.

3. The lab conclusion! Write a sentence explaining how the new substance is different from the original substances.

4. Look at your I wonder chart, it should have at least 2 I wonders. Here are a few of mine. Does the temperature of the water affect how quickly the liquids turn blue? Does the amount of Vitamin C added affect how fast the liquid turns blue? Does stirring the liquids more affect how fast the liquids turn blue?

5. Curds and Whey The vinegar that was added is a substance called Acetic acid. The acid changes a milk protein called casein so that it will clump together to form solid curds.

6. The lab conclusion! Write a sentence explaining how the new substance is different from the original substances.

7. Look at your I wonder chart, it should have at least 2 I wonders. Here are a few of mine. You might include something like changing the temperature. Perhaps you want to change the milk. Maybe you would like to know what happens if you use more vinegar or less vinegar.
