I.Water (H 2 O) A. Polar molecule because it has an uneven distribution of charges. H H O

1. This polarity occurs because H 2 O has two opposite poles (like a magnet). 2. The electrons (-) prefer to hang out around the O, while the H’s are (+) because the protons are “exposed”

B.Hydrogen Bonds- the bonds that form between the (-) side of one H 2 O and the (+) side of another H 2 O.

C.Polarity & hydrogen bonding are responsible for several important properties of water, including:

1. Adhesion- the ability of water to stick to other surfaces.

2. Cohesion- the ability of water to stick to itself. Bodies of H 2 O would evaporate quickly without cohesion.

3. Surface tension- the formation of an elastic like membrane on the surface.

4. Capillarity- the ability of water to move through narrow tubes against gravity. H 2 O sticks to the sides of the tube (adhesion) and to itself (cohesion).

In plants this is called transpiration. H 2 O sticks to the sides of the xylem (adhesion) and to itself (cohesion). As water evaporates out of the stomata, a “chain” of H 2 O is pulled from the roots. Xylem- small tubes (like capillaries) in plants that move H2O. Stomata- small holes in the leaves of plants that allow air in and H 2 O out.
