MY THEME IS MEXICAN FOOD

WHY? I am going to make chicken burritos, this is Mexican. I like Mexican food because it has a range of ingredients so it has many flavours in whatever you are making or going to eat. The reason I decided to make this because I like all of the ingredients that are in them. There are also many flavours inside a burrito. This is an healthy thing to make because it contains chicken which is protein and vegetables for example tomatoes and lettuce.

RECIPE 1 What you will need: 1 tbsp olive oil, 500 g chicken thigh, taken off the bone, 120 ml water, 250 g long grain, microwavable rice pouch, 240 g grated cheddar cheese, 8 Old El Paso Super Soft Flour Tortillas, 100 g mixed lettuce leaves, 10 Cherry tomatoes, chopped length ways. How to make it: 1. Place oil in large frying pan over a medium heat, add the chicken and cook until chicken is cooked throughout – it should turn golden in colour no longer be pink inside. Take off the heat and transfer to a bowl. Then using 2 forks, gently pull apart and shred the chicken 2. In a large saucepan, cook the rice (follow instructions on pouch) and leave to stand for 5 minutes, take off the heat 3. Stir in your chicken To serve 1. Spoon chicken and rice mix onto each warm tortilla, and top with some mixed lettuce leaves 2. Sprinkle with cheese, and a dollop of cool soured cream topping 3. Fold and roll your tortilla and serve to your friends and family

RECIPE 2 What you will need: 8 flour tortillas, 50ml sunflower oil, 500g beef mince, 400g canned chopped tomatoes, 200g canned kidney beans drained, 1 onion, finely chopped, 2 cloves garlic minced, 200ml beef stock,1tsp ground cumin,1tsp paprika, ½tsp cayenne pepper, salt and pepper. Method: 1.Heat the sunflower oil in a large saucepan over a medium-high heat. Saute the onion and garlic for 4-5 minutes, stirring occasionally. Add the beef and increase the heat to brown it all over. 2. Stir occasionally, then add the paprika, cumin and cayenne pepper once the meat is browned. Stir in the chopped tomatoes, kidney beans and stock, bring to the boil then reduce to a simmer for 20 minutes. 3.Adjust the seasoning and remove from the heat. Heat the grill to hot. Spoon the beef filling into the centre of the tortillas and wrap the sides in to create the burritos. Arrange on a baking sheet and top with the grated cheese. 4.Grill for 1-2 minutes until the cheese has melted and transfer to serving plates. Garnish with the sliced jalapeno and sprigs of parsley before serving.

WHICH RECIPE? The recipe I am going to use is recipe 1. the reason I am going to use this recipe is because it’s a basic recipe which I can add to, to improve the recipe. To do this I'm going to add red peppers and also diced onions.
