7 “Conservation of Mass: Percentage of Water in Popcorn” Background
Remember, the law of conservation of mass states that the products of a reaction will have the same mass as the reactants had. We can use this law to find out how much water is present in popcorn kernels and whether or not that internal water effects how the popcorn pops. We can get the mass of the kernels before and after popping and the difference will be the amount of water that was released as steam.

9 Lab: “Conservation of Mass: Percentage of Water in Popcorn” Purpose
Popcorn pops when the internal water inside the kernel gets above 100°C, turns to a gas, and rapidly expands. Different types of popcorn have different amounts of internal water and will pop differently. The purpose of this lab is to determine the percent water in 3 different types of popcorn and to see if there is a relationship between the amount of internal water and how well the popcorn pops.

Which type of popcorn do you think will have the highest percentage of internal water? Do you think the percentage of internal water effects how well the popcorn will pop? Explain your reasoning.

11 Lab: “Conservation of Mass: Percentage of Water in Popcorn” Materials
You will need to actually pop the popcorn to determine the percentage of water it contains, so what kind of lab equipment will you need? What type of container will you use to pop the popcorn? You will use only one 250 mL beaker for all three samples of popcorn. The beaker will need to be cleaned out after each test because they get pretty nasty!

How many kernels should you pop at once? 20 kernels of each type of popcorn work best for each test. You will need to add a few drops of vegetable oil to the beaker before you pop the popcorn. Remember, when any type of food is brought into the lab, it becomes a chemical and CAN NOT be eaten! (It will probably be burned anyway!)

13 Lab: “Conservation of Mass: Percentage of Water in Popcorn” Materials
How will you keep the popcorn from flying out of the container while it’s popping? If you use foil, be sure to poke holes in the foil to let the steam escape. What will you use to pick up the hot beaker? Beaker tongs! Should you put the hot beaker on the lab table? No, put it on a piece of wire gauze to cool.
