7 WHO European Centre for Environment and Health, Rome Training food safety officers from CAR countries in: Food legislation Surveillance of foodborne diseases and outbreak investigation Food Microbiology (microbial ecology, technologically relevant parameters, laboratory methods) Chemical hazards (food contamination, toxicology, laboratory methods) Risk Analysis: *risk assessment * risk management e.g. Hazard Analysis Critical Control Point System (HACCP) * risk communication 1. Short-medium term = Strengthening National Food Safety Systems

10 WHO European Centre for Environment and Health, Rome OBJECTIVES OF THE SEMINAR ON FOOD LEGISLATION provide the basic principles for the development of a National Food Law and a Food Safety Legislation; introduce to the work of the Codex Alimentarius Commission & the Legislative framework of the European Commission; provide a floor to discuss how to develop a modern food safety legislation in the Central Asiatic Republics.
