PORTUGAL Açordate de tomate Ingredients ● - 1 kg of mature tomatoes ● - 1 Large onion ● - 3 Cloves of garlic ● - 2 dl of olive oil ● - 1 Bay leaf ● - 1 Bunch of coriander ● - 1/2 pounds of old bread (from previous day) ● - about 1 liter of boiling water ● - Salt and pepper (to taste)

PORTUGAL Açordate de tomate Preparation: ● 1.In a pan bring to boil the chopped onion with the cloves of garlic and olive oil until translucent. ● 2.Mix the tomatoes peeled and cut into small squares. ● 3.Cook a little, and add the boiling water, the coriander and the bay leaf. ● 4.Season it with salt and pepper. Let it boil until the broth being a bit thick. ● 5.On a tray of clay put slices of bread and cover with boil tomato soup. ● 6.make some holes in the bread soup, were you must lay the open eggs. ● 7.Put it into the oven to cook the eggs and lightly toast. ● It's very tasty if you eat this meal with grapes, fresh figs or melon chunks at same time.

Ingredients ● 1,250 kg of potatoes ● 300g of green cabbage leaves (cuted into thin wires) ● 7 cloves of garlic ● 1 medium onion ● 1 bunch of coriander ● 2 large bay leaves ● 1,5 (or 2) liter of water ● 1dl of olive oil ● 100 g of sausage ● 1 litle spoon of salt (as you like)

PORTUGAL Caldo verde Preparation ● Peel the potatoes, preferably new, and put it, to cook in water (that seems, enough, to you), with the previously peeled garlic cloves and the onion. Let it cook well. ● Beat all with the magic wand and put back on the stove. ● Pour the green cabbage leaves (cut into thin wires) already washed and the sausage cut into slices. ● After ( + ) 5 minutes, when the vegetable broth is cooked, add the coriander the bay leaves, the olive oil and the salt. ● Cook for a few more minutes to open the flavor properly.

GREECE Mousaka USTENSILS ● 1 BAKING PAN ● 1 FRYING PAN INGREDIENTS 6 EGGPLANTS 1 KILO OF POTATOES ½ KILO OF BEEF MINCE 1 ONION 2 EGGS SALT & PEPPER 1 CUP OF OIL 2 SPOONS OF TOMATO SAUCE MILK CREAM

GREECE Mousaka HOW TO COOK 1- FRY THE EGGPLANTS AND THE POTATOES, BOTH SLICED. 2- STIR THE ONION and THE MINCE WITH THE TOMATO SAUCE 3- POUR SOME SALT & PEPPER 4- IN THE BAKING PAN LAY THE POTATOES AND UPON THEM PUT THE MINCE 5- ON THE MINCE SPREAD THE CREAM MILK 6- PUT IT IN THE OVEN AT 200 DEGREES FOR HALF AN HOUR

PREPARATION 1- Peel the onion and the carrots 2- Cut the onion, the carrots and the celery 3- Boil them with the beans in the water for 1 hour 4- Pour the rest of oil with the tomato sauce, some salt and pepper 5- Let it boil for ½ an hour.

In gredients 1 whole chicken Olive oil Salt and pepper to season 3 – 4 sprigs rosemary Method Rub olive oil, salt and pepper on the chicken skin. Place rosemary into the chicken’s cavity. Place on a roasting tray and cover with foil. Cook at gm6/200 degrees in the oven for 1 hour and 20 minutes, basting with its own juices regularly. Remove the foil halfway through cooking. Cook until the chicken’s juices run clear when pierced with a skewer. Remove from the oven and allow it to rest for 20 minutes to allow the juices under the skin to go back into the meat (covered with foil, so it does not become cold). Whilst the chicken is resting, skim the fat off the juices and use the drained juices to make some gravy. Carve the chicken for serving. Serve with boiled vegetables and enjoy!

Preparation ● Peel carrot and parsnip. ● Put carrot, parsnip, leek and chicken wings into pot. ● Fill up a pot with water. ● Cook everything about a hour. Separately cook the noodles ( about 15 minutes ). ● After that take everything out of the pot. ● Cut cooked carrot into cubes and add it to the soup. ● Add noodles and chopped parsley. ● Add salt and pepper. ● Served hot.
