From Grain to Glass - How to Brew Beer at Home Robert Morris ICT710 Begin

2 History of Beer Beer is one of the oldest beverages that humans have produced. Evidence shows that beer was first produced going as far back as the fifth millennium BC. Historians believe that beer was made with grain and water before learning to make bread.

3 What is Beer Made of? Beer is made from the following ingredients:
Water Grain Hops Yeast Sometimes other additions are used such as spices and vanilla beans

4 Types of Beer There are two main types of beer: Ale
Brewed with top-fermenting yeast at cellar temperature Lager Brewed with bottom-fermenting yeast at cooler temperatures

5 Styles of Beer Within the ale and lager categories, there are many styles of beer, including some of the following popular styles: India Pale Ale (IPA) Amber Brown Cream Ale Hefeweizen Porter Stout

6 Terminologies Hot Liquor Tank – This is the kettle that is used to heat water. Mash Tun – This is where the hot water is combined with the grain to extract the sugars. Wort – This is what beer is called before it has been fermented. Carboy – The container that is used to ferment the beer.

Brew Kettle – This is where the wort is boiled and the hops are added. Wort Chiller – This is used to chill the wort after it has been boiled. There are different types of wort chillers available. Airlock – The is used on the carboy to allow gasses created by fermentation to be released without allowing anything into the fermenting beer.

8 Sanitation Sanitation is critical throughout the brewing process. There are a number of popular sanitizing agents that can be used. Anything that the beer touches after it is boiled must be properly sanitized using this instructions provided by the manufacturer of the sanitizing agent.

9 Brewing Methods There are a few different ways to brew beer at home:
Extract Method – Rather than starting with grain, malt syrup is used and this is mixed with the water. Partial Mash – A combination of malt syrup and grains are used. All Grain – This is the most advanced method and what we will be covering in this module.

10 Now, time to dive into the brewing process.
Heat water in the Hot Liquor Tank to 175 degrees.

11 Combine the grain with the hot water in the mash tun and let this sit for one hour.

12 After the sugars have been extracted from the grain…
Drain the wort from the mash tun into the brew kettle. Refill the mash tun with 175 degree water and let sit for 10 minutes. Drain this wort into the brew kettle. This second rinse ensures that all sugars have been extracted.

13 Now that all of the wort is in the brew kettle…
Bring the wort to a boil; most types of beer will need a 60 minute boil.

14 As the wort is boiling, add hops at the appropriate times
As the wort is boiling, add hops at the appropriate times. Different types of beer will have hops added at different time intervals.

15 After the wort has boiled for and all hops have been added…
Cool the wort to the appropriate temperature; this will vary depending on the type of beer and type of yeast being used. Cooling can be accomplished using different types of wort chillers, such as the one below.

16 After the wort has been cooled to the appropriate temperature…
Drain the wort from the brew kettle into the carboy. Pour the yeast into the carboy and put an airlock on the carboy.

17 Now it is time to wait! Depending on the style, the beer will take from 3 weeks to a few months for fermentation to complete. After fermentation has completed, the beer must be either be put in a bottle or put in a keg.
