Basic food hygiene Wear a hair net Wash hands Remove jewellery Cover cuts and wounds with a blue plaster Have short clean nails free from polish Wear a clean apron Avoid licking fingers Wash hands after touching nose or mouth or going to the toilet.

Preparing food safely Clean equipment and utensils with hot soapy water Use an anti bacterial cleaner on tables and work surfaces Use clean clothes for washing and drying Put used dirty equipment near the sink Throw rubbish away Use a probe to check the temperature of food Use a clean spoon each time you taste Cool food rapidly and store in a fridge or freezer Use the correct coloured chopping board and knive
