7. Starting Fall 2007, Holmes Dining Hall will introduce a special food line designed to meet the needs of students with food allergies and other special dietary needs. Menu will include: –One entrée Soy, nut, peanut, lactose, and gluten free Fish, poultry, or vegetarian –One starch Whole grain at least 6 meals per week –One vegetable Steamed, grilled, or roasted –Low in fat –Low in sodium

10. Under The Weather? If you are too sick to join us in the Dining Room, you can fill out a Sick Tray form. Bring the form to the Dining Room or have a friend bring it (and your UNC Card) and pick up a sick tray or a Gourmet To Go for you. We Feed The Bears!! Not sick, but have a scheduling conflict? We have a solution! It’s as easy as filling out a form! Schedule a time to pick up a Gourmet To Go!

14. Chef Aran Essig is one of many award-winning members of our department. He earned yet another title “Certified Culinary Administrator” to add along with “Executive Chef!” This makes him the youngest CCA in the country!! “Hazelnut Crusted Pork Loin with a Minted Apple Forcemeat” won Chef Aran 1 st place at the NACUFS Region VIII Regional Conference –AND– 4th place at a NACUFS National Conference in Cincinnati! 16. Trans Fat Free! Dining Services uses only trans fat free oils in all of our food preparation! We Feed The Bears!! We care for you! That is why all the oils we use in our food preparation contain ZERO trans fats, including our fryer oils. We are committed to providing you with healthier and better tasting food!

17. Waste/Waist Program We Feed The Bears!! 25% of edible food in the U.S. gets wasted. College age (18-25 years old) is the fastest growing age group for obesity in the US. “One Entrée Per Trip” helps us control food waste. Keeps costs under control. Fall 2006 “Trash Can” Statistics from both Tobey-Kendel Dining Room & Holmes Dining Hall: Week #1: over 5,400 pounds Week #2: just under 1,300 pounds Total Reduction: 4,100 pounds of food!! 18. The Environment We strive to take care of our environment! We Feed The Bears!! Both of our Gourmet To Go locations currently use biodegradable bags. The University Center Food Court is switching from plastic utensils to biodegradable utensils. Dining Services participates in UNC’s recycling program.

19. Dining Services makes every effort to accommodate a diverse array of dietary needs. Our Registered Dietitian, Holly Wainscott, is available to answer questions students have about how we can help with specific dietary needs. Special Attention We Feed The Bears!!

20. Food Advisory Board is a group of students who commits to meeting with Dining Services staff on a bi-monthly basis throughout the school year.
