2 Kitchen Cleaning Guest House Mess Laico Procedure: Removing all things (Utensils/Equipments) Cleaning cobwebs & dusting the walls, floor etc Removing stains in the floor, corners etc Sweeping & mopping

3 Equipments and supplies Equipments Soft broom Coconut broom Swabbing cloth Nylon brush Short wooden brush Sponge Supplies Cleaning agent

4 Cleaning a Stove Disconnect the stove from the gas cylinder If the stove is movable set it aside and clean the area where the stove is placed Clean all the other parts of stove except the burners & remove oil or food stains Wipe the top of the stove with a sponge dipped in the cleaning agent Wipe it with a clean cloth Wipe the stove dry using a clean dry cloth

5 Dining Hall Cleaning Guest house Mess Laico Arranging the dining hall Clean the dining hall thoroughly Remove the dust & cobwebs from the wall, sweep and mop the floor well and remove the stains The dining room should be spacious and well ventilated. Arrange the hall neatly to create a spacious atmosphere

6 The windows should be opened and the curtains should be clean and neatly draped The dining table should be neat and clean Place a simple flower arrangement on the table, and it should not be inconvenient to those who sit at both sides of the table A neatly written and artistically designed menu card can be printed and placed at the table The walls can be adorned with beautiful pictures A jug of clean drinking water & well cleaned glasses should be placed at every table The wash basin in the dining hall should always be kept clean and stain free

7 Arranging the food at the table Serving bowls and dishes should be adequate for the food being served Only 3/4 th of the bowl should be filled with food Cover every dish with a lid Serving spoons should be chosen depending on the food to be served Place the serving spoons on the right side of the bowl so that it is convenient to handle Napkins, plates, spoons, forks and glasses should be placed at the corner of the table

8 Serving at the table Those who are serving at the table must wash their hands before serving. Their nails should be manicured, and they should be dressed neat & clean If two persons are serving at the same table, they should clearly assign their duties to avoid confusion To avoid confusion preplan the order of dishes which is to be served first

9 Cleaning after a meal Remove the food from the meal Take the serving bowls, plates, glasses, spoons, forks, and trays to the sink If the table cloth gets stained, remove the stain before sending it to laundry If the table gets stained, remove the stain with cleaning liquid The food on the floor should be swept thoroughly and it should be wiped well and stain should be removed immediately

10 The windows should be left open to allow sunlight into the room. Open windows and let the fresh air come inside and let out any bad odour from the room Switch off the lights and fans Remaining food from the serving bowls and dishes can be served to the cleaners and other kitchen staff Remaining food on the plates should be thrown into the dust bin immediately

11 Wash all the dirty vessels and dry them Wash and clean the sink with the cleaning agent, remove any drainage clogs Dry the sink thoroughly to prevent any water marks Empty the dust bin, wash it and put it in the sunlight to dry
