Brewery Waste Water Solutions for the Problem Presented at the 2010 Water and Waster Water Conference, Madison, WI By Fred M Scheer VOITH MERI ENVIRONMENTAL SOLUTION

Brewery Waste Water Solutions for the Problem What will we discuss: Sources of Brewery Waste Brewery Waste; impact on BOD & SS; pH etc BOD; where does it come from; high and low numbers; effect on Environment Definition of SOLIDS Brewery By-products VOITH MERI ENVIRONMENTAL SOLUTION

EFFLUENT Responsible Brewing Operation Definition of solids Impact on Waste water Impact on waste water Sources of waste water Brewery By- products Publications at www.mbaa.com Sources of waste water Brewery Waste Water Solutions for the Problem VOITH MERI ENVIRONMENTAL SOLUTION

Brewery Waste Water Solutions for the Problem Sources of Brewery Waste Milling – Dust Mash tun – Wet spent grain; last running's Wort kettle; hot trub; spent hops Whirlpool; trub; spent hops Fermentation; Yeast, beer Beer Storage: Yeast; beer Filtration: Spent DE; beer Packaging, Utility Material: Ammonia, Glycol, lubricating oils etc VOITH MERI ENVIRONMENTAL SOLUTION

Brewery Waste Water Solutions for the Problem Brewery Waste; impact on BOD & SS; pH etc * SS = Suspended Solids (beer, extract, sugars, have no SS, but they have dissolved solids Depends on aging time and filtration conditions. The BOD can be high if pumping and filtration create a lot of yeast cells in the filter bed (DE and Yeast) Spent GrainHigh in SS TrubHigh in SS* ExtractHigh in BOD SugarsHigh in BOD BeerHigh in BOD** DEHigh in SS; NO BOD YeastHigh SS, High in BOD VOITH MERI ENVIRONMENTAL SOLUTION

Sources of Effluent loads SourceOperationCharacteristics Mash TunRinsingCellulose, sugars, amino acids, 3,000 ppm B.O.D Lauter TunRinsingCellulose, sugars, spent grain, can be high in S.S. (3,000 ppm), B.O.D ~ 10,000 ppm Spent GrainLast Runnings and washingCellulose, nitrogenous material, very high in S.S. (30,000 ppm), up to 100,000 ppm B.O.D Boil KettleDewateringSugars, nitrogenous residu, B.O.D ~ 2,000 ppm WhirlpoolRinsing spent hops and hot trub Trub discharge and rinsing Proteins, sludge and wort, High in S.S (35,000 ppm), B.O.D ~ 85,000 ppm FermentersRinsingYeast, ~ 6,000 ppm S.S.,up to 100,000ppm B.O.D Storage Tanks RinsingBeer, Yeast, Protein, HIGH S.S (4,000 ppm) ~ 80,000 ppm B.O.D

Sources of Effluent loads SourceOperationCharacteristics FiltrationCleaning, start up; end of filtration; leaks during filtration EXCESSIVE S.S (up to 60,000 ppm), beer, yeast, proteins, up to 125,000 ppm B.O.D Beer SpillsWaste, flushing, etc1,000 ppm B.O.D Bottle washer Discharges from bottle washer operation High pH; high S.S and B.O.D; exspecialle through load of paper pulp Keg WasherDischarge from keg during kegging operation Low on S.S ~ 400 ppm Higher at B.O.D Miscellaneo us Discharged cleaning and Sanitation materials; floor washing; flushing water, boiler blow-down, etc Relatively low on S.S and B.O.D, but problem here is due pH and chemicals discharged into sewer VOITH MERI ENVIRONMENTAL SOLUTION

Brewery Waste Water Solutions for the Problem Brewery Waste; impact on BOD & SS; pH etc Brewery cleaning solutions: If Brewery cleaning solutions, such as acids or caustics, are released rapidly into a waste water treatment plant drastic pH fluctuations within the effluent will result. That pH fluctuation can cause operational problems … SOLUTION: Slowly meter the cleaning solutions into municipal waste plant; adjusting for high – or low pH VOITH MERI ENVIRONMENTAL SOLUTION

Brewery Waste Water Solutions for the Problem BOD; where does it come from; high and low Beer, wort~ 80,000 mg O2/Liter Last running's (lautering)~ 10,000 mg O2/Liter Brewery Waste Water~ 1,000 – 2,000 mg O2/Liter Household waste water~ 300 mg O2/Liter Cleaned waste water~ 25 mg O2/Liter In the table above we see how much Oxygen is utilized in the “BIOCHEMICAL OXIDATION” calculated in mg of oxygen per liter. The high BOD is a result of organic substances. VOITH MERI ENVIRONMENTAL SOLUTION

Brewery Waste Water Solutions for the Problem Definition of SOLIDS Solids can be classified into five different types: 1. Suspended Solids (SS) 2. Suspended Volatile 3. Dissolved 4. Total 5. Total Volatile VOITH MERI ENVIRONMENTAL SOLUTION

Brewery Waste Water Solutions for the Problem Definition of SOLIDS Solids can be classified into five different types: *1. Suspended Solids (SS) SS are solids that are non- filterable with glass fiber filters, equivalent and not volatized at 103*C Very small particles remaining dispersed in a liquid due to turbulent mixing that can create turbid or cloudy conditions. Measured in milligrams per liter (mg/L).liquid condition VOITH MERI ENVIRONMENTAL SOLUTION

Brewery Waste Water Solutions for the Problem Definition of SOLIDS Solids can be classified into five different types: 2. Suspended volatile solids are that portion of suspended solids that are volatized at 550*C VOITH MERI ENVIRONMENTAL SOLUTION

Brewery Waste Water Solutions for the Problem Definition of SOLIDS Solids can be classified into five different types: 3. Dissolved solids are those solids that are in solution and therefore filterable VOITH MERI ENVIRONMENTAL SOLUTION

Brewery Waste Water Solutions for the Problem Definition of SOLIDS Solids can be classified into five different types: 4. Total solids are all of the solids present whether suspended or dissolved VOITH MERI ENVIRONMENTAL SOLUTION

Brewery Waste Water Solutions for the Problem Definition of SOLIDS Solids can be classified into five different types: 5. Total volatile solids are the portion of the total solids that are volatilized at 550*C VOITH MERI ENVIRONMENTAL SOLUTION

Brewery Waste Water Solutions for the Problem Brewery By-Products *Spent Grain *Spent Yeast *Trub *Spent DE *Caustic Solutions * Heavy Metal VOITH MERI ENVIRONMENTAL SOLUTION
