CT Embedded CAPT Task Uses of enzyme in juice production

What are Enzymes? Enzymes are proteins found in the cells of all living things. Enzymes connect to molecules in living things to break them apart or put them together. A substrate is the original molecule that connects to the enzyme. This picture shows an enzyme binding to a substrate.

Uses of enzymes Enzymes have a huge range of uses: –Detergents –Textiles –Food and Beverages –Leather –Biodegradable plastics

Your task The Twohigville Apple Juice Company wants you to find out which enzyme (or combination of enzymes) will produce the most juice They provide you with two enzymes to work with: –Cellulase –Pectinase

Cellulase and Pectinase Cellulase breaks down cellulose –Cellulose is the main component of plant cell walls –Purified cellulase is used in industrial production of wine and juices Pectinase breaks down pectin –Pectin is the “glue” that holds plant cell walls together –Pectinase is used in fruit juice production

Designing your experiment Problem statement- what are you investigating? Hypothesis- If… then…because… Variable identification Procedure You need teacher approval BEFORE you set up your experiment and take data!
