2 Goal of In-Service Facility will provide hot beverages to residents in a manner that promotes safety and meal satisfaction.

4 Temperature for Hot Liquids
All hot liquids have the potential to burn residents. There is no “safe” temperature for hot liquids. Hot liquids cause third degree burns… in 1 second at 156 degrees in 2 seconds at 149 degrees in 5 seconds at 140 degrees in 15 seconds at 133 degrees Residents prefer the temperature of hot beverages in the range of degrees F

5 Drip Brew Machines Manufactures Instructions:
a brew temperature of degrees F (typically come pre-set at 205) if point of service temperatures are consistently greater than 155 degrees, consider reducing brew temperature to 185 F. cannot set below this temperature or brewed coffee will be under-extracted.

6 Liquid Coffee Dispensers
Default tank temperature is 180 degrees, with available temperature range of degrees. ** When determining appropriate temp setting, keep in mind length of time between when coffee is dispensed and when it is served. ** If serving directly to residents, turn to degrees F taking resident temperature preference into account. If there will be a delay between pouring and service consider an increased tank temp. Monitor point of service temperatures and adjust tank temp as needed to achieve point of service temp in the degree range.

7 Hot Beverages on Test Trays
Coffee/hot water temperatures should be taken prior to the start of service at each meal. Test trays to be completed periodically and hot beverage point of service temperatures should be reviewed. May need to adjust brew temp or liquid coffee dispenser tank temp to meet goal point of service temperature of degrees.

8 Avoiding Spills Do NOT overfill containers
Fill cups by placing on a table or tray before pouring ** Never pour hot beverages while a resident is holding the cup. ** Never hand a hot beverage to a resident with mobility deficits or allow a resident to place a hot beverage in the wheelchair seat. Always take the hot beverage to a stable surface that a resident can easily access. Assist residents with hot beverages as needed if any self-feeding deficit noted (e.g. weakness, shaking, fatigue)

9 Methods + Procedure Hot beverages will be served at optimum temperature for resident satisfaction ( degrees) Hot beverages will not be left unattended in the dining area for resident self-service. All hot beverages have the potential to cause an injury, and will be handled carefully during food delivery and meal set up to avoid spills that could cause burns. Appropriate supervision will be provided as needed for residents with decreased safety awareness and/or self-feeding deficits that could place them at risk for burns/scalds. Staff will monitor for increased behaviors or agitation at meals and consider an alternative for hot beverages if a resident is at increased risk of burning themselves or others. Staff will monitor hot beverage temperatures periodically at the point of service and make adjustments as needed. Resident concerns about beverage temperatures will be addressed as needed.
