2 Animal Production Food Safety OIE objectives
Consider all food hazards of animal origin before slaughter and primary processing of products Emphasis on measures applicable at farm level Ensure food safety is taken note of in all OIE work Consider other standard setting bodies’ work (cooperation with Codex)

Control of hazards of public and animal health importance through ante- and post-mortem inspection Veterinary involvement in risk assessment associated with ante- and post- mortem inspection is essential. Institutional approaches that bridge public and animal health sectors at national level replace traditional focus on regulating individual production systems, shifting to one of ensuring confidence overall regulatory frameworks at all levels

APFS WG documents in progress Guide to Good Farming Practices help competent authorities and stakeholders, especially farmers covers the “farm end” of the food chain the recommendations complement the responsibilities of the competent authorities at the farm level

9 Coordination with Codex Alimentarius
Codex Alimentarius is responsible for developing standards on food safety and public health, while OIE is responsible for standards for animal health and zoonoses. Increased collaboration between OIE and CAC will ensure standards that bridge public and animal health interests in the ‘production to consumption continuum’.

The Aquatic Animal Health Code (AAHC) provides international standards in order to ensure the sanitary safety of international trade in aquatic animals and their products Under WTO SPS Agreement Associated with the OIE Manual of Diagnostic Tests for Aquatic Animals
