1 Timetables

2 Why is a timetable important?
The timing of tasks is important to ensure the completion of recipes in the food lab or at home. A timetable is implemented by dividing a sheet into six categories.

3 What is dovetailed mean again?
1. List Tasks List all tasks in order of: Pre-preparation Preparation Clean-Up Remember some tasks are not on the recipe Some tasks can all be dovetailed What is dovetailed mean again?

4 2. Estimate Time (in Minutes)
List the amount of time needed to execute the tasks in minutes. Be realistic It is better to allow too much time than too little How long would it take to measure all the ingredients for a cake? 2 minutes? 5 minutes? 10 minutes? 15 minutes?

5 3. Calculate Total Time Add of the estimated time in minutes.
Example, if the pre-preparation is 3 minutes, preparation time is 3 minutes and cooking time is 10 minutes then the total time is 16 minutes for the dish.

6 4. Identify End Time What time do you need to be done by?
In the lab your teacher may assign you an end time for the lab. Note: end time does not include time to sample At home what may determine your end time?

7 5. Determine Clock Time You can begin identifying the clock time for each task, working backward from the end time, using your estimated time in minutes Note that tasks that are dovetailed will have the same clock time, because the are being completed at the same time

8 6. Calculate Start Time By working backward you will identify your start time, but just to be sure: Subtract the total estimated time needed to prepare the recipe from the desired serving time. Previous example, if the meal needs to served at 6:00. Subtract 16 minutes from 6:00, this means the dish needs to be started by 5:44 to be ready on time.
