High CO2 concentration reduce breathing, thereby form dull & wrinkle skin, low skin shine, high sweetness (specially in case of potatoes etc). Reduce product weight, market price. High CO2 also reduce O2 concentration resulting in anaerobic decomposition. Low O2 also cause darkening of potato chip colour, ultimately result in decay of interior cell with black heart.

Ammonia is very toxic gas for biological life and human and life threatening with TWA = 25 ppm Ammonia leakage can percolate to stored items and thereby enter food chain. Freon leakage can sometime lead to fire, causing considerable damage to assets.

Low ethylene concentration cause under-ripening, hence low market price of the products, while high ethylene concentration can damage products, increasing spoilage.

Low temperature will freeze up the inside content and reduce natural sweetness and taste, sometime forming carbohydrate, sucrose crystals High humidity will increase moisture content in the stored items, leading to bacterial and worm formation. Sometimes, dew formation also lead to considerable spoilage. Low humidity will reduce weight, sweetness, natural flavour and increase in rejection
