Adds colour. Adds bulk Flour Sugar Contains a raising agent Provides fibre if wholemeal Acts as a preservative. Traps air. Adds colour. Adds flavour. Butter Helps add a crumbly texture. Binds ingredients.

5 Rubbing in method 'Rubbing in' is a technique where flour is rubbed into a fat to make dishes such as short crust pastry, crumbles and scones. -Using your fingertips, rub the flour and butter together until the mixture resembles breadcrumbs (fine or coarse, depending on the recipe).  -Lift the mixture up as you rub it in so that the air going through it keeps it cool.  -Shake the bowl every so often to bring the larger lumps of butter to the surface.

7 Chocolate Chip Cookies
Ingredients 50g margarine 125g plain flour (5 tbsps) 50g white sugar (2 tbsps) 25g chocolate chips (1 tbsp) 1 egg Method Rub margarine into flour until it looks like breadcrumbs. Stir in sugar and chocolate chips. Beat the egg together with a fork. Add egg mixture to the dry ingredients a little at a time to make a stiff dough. Place mixture in small spoonful's on a greased baking tray. Bake for 10-15mins on Gas 4 / 180°C until golden brown.
