It is celebrated on March 17. Each year traditional Irish foods like corn beef and cabbage and Irish soda bread are requested. However, the real treat comes in the form of a cinnamon-coated Irish candy. This candy, Irish Potatoes, is made from simple ingredients: cream cheese, powdered sugar, vanilla, flaked coconut, milk, and cinnamon. So let’s taste a little piece of Irish tradition. First, in a large bowl, slowly mix the powdered sugar and softened cream cheese together. You’ll need muscles, as this step is tiring, so make sure the cream cheese is soft. Next add the vanilla, coconut, and milk. Blend the mixture until it becomes a very thick paste. Don’t worry how it looks during this step because the final product is delicious. Now refrigerate the mixture for fifteen to twenty minutes. After chilling the paste, roll the candy mix into little round balls and toss into a plastic bag of cinnamon. Remove the candies and place them on a tray covered with wax paper. Enjoy and may you have the luck of the Irish! 2 How to Make Cheese Pie One of my favorite food memories is the smooth, sweet taste of my grandmother’s cheese pie. She had a collection of many mouth-watering recipes, but none is more memorable to my taste buds than her cheese pie. I said cheese pie, not cheesecake. Oh, I’ve had some terrific cheesecakes, but my grandmother’s creation was the best. She made them on special occasions and holidays, and the whole family looked forward to the dessert part of the meal. She once told me that she learned the recipe from her mother, a German immigrant, who baked with simple ingredients but made wonderful treats. That’s what is so special – the simplicity of the recipe. Let’s get the ingredients: butter, sugar, baking powder, flour, egg, small curd cottage cheese, lemon juice, milk, and cinnamon. We’re ready to start baking! The recipe contains two parts: crust and filling. I must state that the crust should be handmade – no store bought crust for a real cheese pie. First whip the butter, sugar, and egg together. Then add the baking powder and flour. Mix it all together to form the crust. Next, carefully press the crust mixture into a glass Pyrex pie plate. Place the plate aside and now create the filling. To start, mash the cottage cheese to a fine consistency. A food processor does the trick, but my grandmother insisted on a potato masher. Then mix the final ingredients (minus the cinnamon) into the cottage cheese. Finally, pour the mixture evenly into the crust and generously sprinkle cinnamon on top. Place in a 350° oven for 50 minutes. Oh, I can taste it now!
