7. Maple Syrup Industry New Hampshire is the leading producer of maple syrup in the United States. Close to 90,000 gallons of maple syrup is made in NH every year. It takes about 40 gallons of sap to make 1 gallon of maple syrup. What is sap? Sugaring time is only 4-6 weeks long. Mid-February through mid-April
