Monday/Tuesday Introduce the students to the holiday by discussing with the class what they think Cinco de Mayo really is about. Assessment: Have the students create a drawing/story of what the class thinks the holiday is. Differentiation: For the students who are ELL or have a documented disability, have them pictorially draw what they think it is about or color the map of Mexico.
