What are Hops? Hops are one of the basic ingredients in beer brewing - the others being grain, yeast, and water Flower of the hop plant Contain an essential oil with a very bitter flavor Contain two essential acids – Alpha: responsible for the bitter flavor in the beer – Beta: contribute to beer's bitter aroma

Hop Kinds Bittering and Aroma – Bittering hops have higher concentrations of alpha acids, are responsible for the large majority of the bitter flavor of a beer, and are generally boiled longer – Aroma hops are typically added to the wort later to prevent the evaporation of the essential oils, to impart "hop taste", or "hop aroma"
