3 SCOPE OF WORK Working in a commercial kitchen or anywhere that food is prepared on a large scale, such as hotels. 4 JOB RESPONSIBILITIES Cleaning and maintenance is the biggest part of this job. Make sure that all the tools and utensils needed for a cooking task and specific meal are washed and ready to use. They are in charge of storing and organizing the walk-in freezer, refrigerator, and stock room. Make sure that all necessary equipment is properly stored and readily available for kitchen staff. Additional tasks (in a small restaurant): bus tables, refill water glasses for patrons, or sweep the dining room floor.

5 JOB SKILLS Be able to lift, carry, or pull objects that may be heavy. Stand and walk for long hours (up to 4 hrs.) Learn basic procedures and techniques. Perform routine work or the same task over and over again. Understand food service regulations.

6 EDUCATIONAL REQUIREMENTS AND SALARY No educational requirements (actual work experience is more important.) Many employers want workers to have at least a high school diploma. 11 Job Responsibilities -Wash dishes, glassware, flatware, pots, and/or pans using dishwashers or by hand -Clean garbage cans with water or steam -unloading and loading the dishes and cutlery into dish trays. -Monitor dish machine water temperature and chemical levels to ensure sanitary wash cycle. -Maintain kitchen work areas, equipment, and utensils in clean and orderly condition -Place clean dishes, utensils, and cooking equipment in storage areas -Prepare and package individual place settings -Empty all the garbage cans to the dumpster -Sweep and scrub floors. -Keep and maintain a clean workstation at all times.
