4 Unsaturated Fatty Acid Tails
Tails are bent (unsaturated) causing fluidity Membranes solidify when they get cold Membranes with unsaturated phospholipid tails solidify at a lower temperature Organisms adapted to cold climates have more unsaturated phospholipid tails
