LIPIDS

Where can you find lipids?

Lipid Functions and Properties Energy storage – Better source of energy than carbs Cushioning Insulation Lipids are not polymers! Why?? Contain C, H, and O but in a DIFFERENT structure than carbohydrates, and a different ratio Mostly hydrophobic

Fatty Acids Saturated fatty acids – All Carbon atoms bonded to the maximum number of hydrogens Unsaturated fatty acids – At least one Carbon to Carbon double bond

Triglycerides Made up of a glycerol molecule and 3 (tri) fatty acids Bonded together, lets go of an H2O molecule Hydrophilic heads, hydrophobic tails – Think soap

Triglycerides (cont.) Saturated fats: Tend to be bad for you Found in animal products Tend to be solid at room temp

Triglycerides (cont.) Unsaturated fats Tend to be good for you Derived from plant and some animal sources Tend to be liquid at room temp 2 types: – Monounsaturated fats – Polyunsaturated fats

Monounsaturated Fats One fatty acid in the triglyceride is an unsaturated fatty acid Found in:

Polyunsaturated Fats 2 or more fatty acids in the triglyceride are unsaturated fatty acids One type: Omega-3 Found in:

Other Types of Lipids Steroids – Cholesterol – Hormones Sex hormones (estrogen, testosterone), cortisone – Anabolic Steroids Waxes – Not water soluble
