True or False?? A baked potato is a potentially hazardous food. A frozen turkey thawed on a prep table at room temperature is not hazardous. Failure to cook food properly is a common risk factor for food borne illness. Cockroaches leave shiny grey droppings. Elderly people and children have a higher risk of contracting a food borne illness. Hamburger meat should be stored above the eggs in the refrigerator. Using the same cutting board for chicken and vegetables is not hazardous.

How does food become unsafe? Purchase from an unsafe source Failing to cook adequately Holding at improper temperatures Unsung contaminated equipment Poor personal hygiene

Time- Temp Abuse Allowed to remain too long at temps favorable to the growth of food borne microorganisms –It is not held or stored at required temperatures –It is not cooked or reheated to temps that kill microorganisms –It is not cooled properly

Cross Contamination Occurs when microorganisms are transferred from one surface or food to another –Contaminated ingredients are added to a food –Cooked or ready to eat food touches a surface that is not sanitized –Contaminated food is allowed to touch or drip fluids on cooked or ready to eat –Contaminated cleaning cloths are not cleaned and sanitized before being used on other food contact surfaces

Poor Personal Hygiene Fail to wash hands properly Cough or sneeze on food Touch or scratch sores/ cuts, and then touch food Come to work sick

Recent News Items?? Spinach Tomatoes Jalapeños from Mexico Dog food

Things I have seen and do not want to see happen in here ever again….. Lick spoon and put back in cookie batter Put sandwich wrapped in foil in the microwave Burned popcorn!!!!!!!
