MAYAN INDIANS AND THE AZTECS The Mayan Indians of Mexico began using a form of chocolate as early as 600 a.d., they worshiped the cocoa bean and thought it was gift from the gods; The Maya were the first to invent a cocoa drink, which was hot and bitter made up ground cocoa pods and spices. The Aztec Indians improved upon the recipe, sweetening it with vanilla and honey. They called their drink "xocoati" (pronounced similar to Chocolat), meaning "bitter water.“ Chocolate became used as a form of currency along with gold dust by the Aztecs.

Don CORTES THE EXPLORER In 1528 when Cortes returned to Spain from the New World, he brought with him the Aztec's chocolate drink But due to the drink's powerful reputation, the beans were hidden away in monasteries and the formula for the drink kept secret, to be enjoyed only by the wealthiest people.

CHOCOLATE IN EUROPE. In the 1600s Italian traveller Antonio Carletti carried the beans to the rest of Europe and chocolate came available to the common people. By the 1700s, so-called "Chocolate Houses" were all the rage, as popular as coffee houses. In England,King Charles tried to close them down because he thought only the rich should drink chocolate. When chocolate first came to France, it was thought to be a dangerous drug. The idea of mixing chocolate with milk did not come until the 18th century. Sir Hans Sloane, doctor to Queen Anne, invented the secret recipe and later sold it to the Cadbury brothers who made there fortune.

CADBURY. The Cadbury family started to sell the drinking chocolate from there grocery shop in Birmingham, where they sold mainly tea and coffee, John Cadbury started making drinking chocolate, using cocoa beans imported from South and Central America and the West Indies. He used a mortar and pestle to produce a range of cocoa and drinking chocolates with added sugar.

CADBURY. By 1831,Cadbury was selling so much drinking chocolate he rented a small factory not far from his shop and became a 'manufacturer of drinking chocolate and cocoa'. This was the start of the Cadbury business as it is today. In 1842 John Cadbury sold sixteen lines of drinking chocolate and cocoa in cake and powder forms. Customers would scrape a little off the block and mix it with hot milk or water. A solid chocolate for eating was introduced by John Cadbury in 1849, which was not as nice as today's chocolate. In 1866 George Cadbury,Johns son brought a press from Holland. The press changed the face of cocoa and chocolate production, as it was designed to remove some of the cocoa butter, making a less rich and more tasty drink. There was no longer any need to add the various types of flavour and Cadbury's new cocoa essence was advertised as 'Absolutely pure...therefore Best'.
