1 BAKING CLASSES REPORT SUMMER 2014

2 BAKING CLASSES As an extension of The Recetas program, thanks to funding from Presbyterian Hunget Program and Paul G. Allen Foundation, we started a Baking Program, with a total of 6 classes, these classes had as an objective to teach the basics of baking, including several of the recipes from the dessert tables offered in the Recetas catering menus. The main objective of our baking classes is to offer a more complete education for all our students, whether they want to get a stable job in the food service industry, start their own business selling products at the farmers markets, or join our catering team. Week 1 - Banana bread, brownies and bars Week 2 - Corn bread, brownies and bars Week 3 - Brownies and Bars Week 4 - Alfajores and scones Week 5 - Cupcakes and muffins Week 6 - Chocolate covered strawberries, churros

3 Classes started in July, and we had two groups of 5 participants each. Classes were hold for 6 weeks at our certified commercial kitchen in Aloha on Thursdays from 10am to 1pm and Fridays from 11am to 2pm where the ladies were able to learn the basics of baking, practiced basic math, worked with fractions, and applied this new concepts in the culinary field. A basic math class needed to be offer since they all were having trouble understanding how fractions work. Majority of our ladies have an education level equivalent of 5 th - 6 th grade, this class helped them to understand, and practice the importance of fractions and numbers in baking, and after different exercises, and practices they were able to implement these new concepts. The 10 of them completed the program and were able to recreate recipes at their house, and also at some of the catering opportunities ( Homegrown event, and Juniper Gardens opening ) that Recetas had.
