3 United States Department of Agriculture Food Safety and Inspection Service 3 Hazard Analysis A thorough, well-supported hazard analysis is an essential cornerstone for the entire HACCP system. A hazard analysis that either fails to identify and subsequently control reasonably likely to occur hazards OR that fails to adequately support decisions made in the hazard analysis( i.e. adequately support why hazards are not reasonably to occur), may cause the validity of the entire HACCP system to be called into question.

4 United States Department of Agriculture Food Safety and Inspection Service Hazard Analysis Are all hazards identified? Are all decisions made in the HA supported with documentation on-file?

5 United States Department of Agriculture Food Safety and Inspection Service Prerequisite Programs PP provide a foundation for the development and implementation of an effective HACCP system. Since plants often use pre-requisite programs to support decisions in the HA (i.e. why potential hazards are not reasonably likely to occur because they are prevented by a pre- requisite program), the pre-requisite programs will be carefully evaluated to assess whether they support decisions made in the HA
