Good Eats Recipe File: Fresh Greens Main DishSide DishLeft-over Dish Kale & Beef StewSautéed CabbageSunday on Monday Bake (Collards, Chicken & Rice Bake)  Fresh kale (2 bunches)  Beef stew meat (1-2 pounds)  Carrots (4 large)  Onion (1 large)  Potatoes ( 3-4 large)  Diced tomatoes (large can)  Garlic (3 cloves)  Flour (4-5 tablespoons)  Cooking Oil ( 3 tablespoons)  Water or broth (3 cups)  Salt & Black/Red Pepper (to taste)  Fresh Cabbage (1)  Onion (1 medium)  Green /Red Pepper (1 medium)  Garlic (1 medium clove)  Salt & Black/Red Pepper (to taste)  Chopped left-over collards (2 cups)  Diced left-over baked chicken (2-3 cups)  Cooked Rice (2 cups)  Cream of Mushroom Soup (I can)  Garlic powder (1/2 teaspoon)  Evaporated Milk (1 can)  Shredded Cheese (1/2 cup)  Salt & Black/Red Pepper (to taste) Season meat and sauté in hot oil with onions and garlic...stir in flour...add tomatoes (with juice)...add remaining vegetables...add water or broth...season to taste...simmer until meat is tender (30 minutes) Stir fry shredded cabbage, onions, garlic and pepper n hot oil... season to taste... cook until done but crispy (10 minutes) Combine soup and canned milk...stir until creamy, add meat, collards and cooked rice...season to taste...pour mixture into casserole dish...cover with shredded cheese...bake until brown (30 minutes) Tastes great with:  Warm wheat or cornbread  Apples sauce (side dish)  Baked apples or pears (side dish) Tastes great with a meat or fish entrée and:  Warm wheat or cornbread  Sliced tomatoes (side dish)  Corn on the cob (side dish) Tastes great with:  Warm wheat or cornbread  Baked apples or pears (fresh or canned)  Cranberry sauce (side dish) Cabbage combats cancer, controls blood pressure, lowers cholesterol, supports immune system, rich in vitamins C, B, K & potassium Collards low calorie, combats cancer & bacteria, prevents constipation, rich in vitamins A, B, C, K and calcium Kale combats cancer, controls blood pressure, lowers cholesterol, strengthens bones, rich in vitamins A, B, K & iron Ingredients Nutrition value Directions KitchenKids! © 2011 – Written Permission Required For Duplication Or Distribution
