Gate 2: Ingredients Stage 2: Focus Group Yogurt: First thing that comes to mind Strawberry, Yoplait, sweet-thick consistency, healthy Yogurt as an ingredient Used as a dip, Greek food, yogurt covered pretzels and raisins Plain yogurt is like sour cream Could work on a taco pizza Ordering pizza at subway Would not because it is known for Sandwiches Hot yogurt NO- thinks it would curdle and taste would change Tasting of Plain Greek yogurt Sour, needs flavor, similar to sour cream, cheesy after taste, sweeten it with honey

Gate 3: New Pizza Idea Decided to change because ingredients were very similar to the other pizza group and to be more cost effective for Subway by using ingredients they already have Stage 1: Ingredients Chicken = 96 grams Garlic= 3.8 grams Onion, Roasted Red Pepper mixture = 45.8 grams Sautéed with garlic and olive oil Realized subway wouldn’t do that and the oil added extra fat Sauce = 128.3 grams Mozzarella Cheese: 31.6 grams Fresh Basil = 1.5 grams Many people liked the appearance Chobani Representative Comments Too much sauce Loved the taste and appearance

Gate 3: New Pizza Idea Stage 3: Fresh Basil vs Subway’s dried Oregano Realized we should be using portions that subway already uses, according to the nutrition fact sheet Red Onion: 14 grams Roasted Red Pepper: 30 grams Fresh Basil: 1.5 grams Dried oregano: 0.3 grams Chicken strips: 71 grams Cheese: 30 grams Sauce: 80 grams Next time use less sauce to reduce fat and sodium Fresh BasilSubways Dried Oregano Significance 136NO

Gate 5: Tuscan Chicken Pizza Sub Stage 1: First Round of Nutrition Facts of 6 inch pizza sub (117.2 grams) Calories: 391.67 Fat: 5.8 grams Sodium: 1229.16 mg Conclusions: Subway will not use fat free mozzarella cheese Using regular will be cost effective but it will increase the fat, calorie, and sodium content Therefore we decided that only serving ½ of a 6 inch sub will help to meet our nutrition requirements
Gate 5: Tuscan Chicken Pizza Sub Stage 3: Descriptive Panel Gourmet!!! Flavor: strong taste of anise but then goes away, taste Italian herbs oregano, could tell chicken was marinated Tomato Sauce was a good balance to the pizza Onion did not overpower There was a nice blend of flavor “herbal complexity”– no one ingredient overpowered another. Believable that it was a Tuscan Chicken Pizza Comparable to Stouffers French Bread Pizza Needs more cheese “Don’t change anything!”
