55 55 History of Sushi Ingredients of Sushi NORI Nori is the Japanese name for various edible seaweeds. Nori is commonly used as a wrap for sushi. Why the Rice Tastes So Good The white rice used for making sushi is cooked differently than the rice you eat with other Japanese food. Sushi rice is made with:  Short-grained rice  Water  Rice vinegar (different kinds produce different colours)  Sugar  Salt Good sushi rice must have a delicate, sweet flavor that complements fish and clams without overpowering them Soy sauce or Soya sauce is fermented sauce made from soybeans (soya beans), roasted grain, water and salt. The sauce, originating in China, is commonly use widely in East and Southeast Asian cuisines and appears in some Western cuisine dishes. At John Dory’s we offer our customer a choice of 2 different soya sauces. The red bottle offers a very salty sauce whilst the green bottle would be lighter meaning, less salty (a healthier option). These bottles are placed on the sushi bar and a small dish is used to pour the sauce for each customer.

56 56 According to the tradition, only the fish side of the sushi is to be lightly dipped in the soy sauce, however many people prefer to dunk their rice in as well (this causes some of the rice to fall of the fish). The full-strength soy sauce may overpower the flavours of the fish. “Different strokes for different folks”…. customers are free to experiment with different options and acquire their own preferences. Wasabi Wasabi became a sushi dressing in the mid-1800 when the sushi preparers noticed that people who took small amounts of wasabi did not get sick. It turns out that one of wasabi's best properties is killing parasites in the fish. Its delicate aroma and sweet undertones enhance the flavor of the fish with which it's eaten. Ingredients of wasabi today consists of horseradish, mustard and cornstarch. Wasabi may look like innocent Avo but please warn your guests, that it is a rather hot spice with quite a bite. Traditionally the chef will put the correct amount of wasabi on the sushi itself however, due to different tastes, it‘s now served on the side. Guests may place a dollop on the sushi itself or stir the wasabi into the soy sauce (this practice was started by the Americans). However, warn your guests, wasabi may rapidly loose its spiciness and flavour when immersed in liquid. Ginger The purpose of the pickled ginger served on the side, is to cleanse the palate between different types of fish. Many people also prefer to place a piece of ginger together with a small dollop of wasabi on top of the sushi. Though this is not the correct way, it sure causes is a taste sensation. Avo Avocado is a fruit that is often combined with many sushi dishes. Fresh ripe Avo is always used. Once the Avo is cut and sliced, it should be incorporated into the sushi, etc potion immediately, to prevent it from discoloring.

57 57 Vegetables John Dory’s offers a choice between radish and cucumber… or any other vegetable that may be in season or pricks the chef’s interest, maybe even fruit. Paw Paw, Mango and Pineapple seem to be the favourite. Fish Salmon – served raw Prawn – served cooked Tuna – served raw Crab sticks Crab sticks are a type of processed sea food made from surimi, or finely pulverised white fish flesh that has been shaped and cured to vaguely resemble snow crab legs. Theindividual pieces are usually coloured red. The smell of crab sticks is similar to other sea-food products, the texture is rubbery, and the taste is slightly salty. Crab stick is cooked in its curing process and can be eaten directly from the package.Quality imitation crab is usually lower in cholesterol than regular crab, but is also highly processed. The taste is vaguely like steamed crab. YOU MAY EAT SUSHI WITH YOUR HANDS OR WITH CHOPSTICKS, WHATEVER IS MORE COMFORTABLE. Sashimi is the exception, this should always be eaten with chopsticks.

58 58 Eating this delicious treat Pour soy sauce into the provided bowl Add wasabi to the sushi as required Dip the fish part (or everything if you prefer) into the soy sauce Enjoy in one bite Eat a little bit of pickled ginger in between, to clean the palate. This is served on the side. When eating sushi one will get thirsty pretty quickly, with all that rice & soya being consumed, make sure drinks are full all the time!!!
