2 1 Summary Today a new type of water, “E-water” is the subject of much attention. To manage the sanitation of the food industry, E-water production system ‘ROX’ was developed by HOSHIZAKI. E-water is generated from ‘ROX’, and you can prevent food poisoning by using E-water for food washing and environmental disinfection. Approx. 80% of food poisoning is attributable to bacteria cross- contamination. It is necessary to disinfect utensils & hands during cooking to prevent food poisoning. However the chlorine sterilization often used as disinfectant can’t be used during cooking because of the strong residue. However, E-water can be used easily during cooking, as it leaves no residue behind. We hope very much E-water spreads in Europe, because unlike a lot of chemicals, E-water is safe to human body and environment.

3 What is ROX? 2 R: Reduction - Alkaline water OX: Oxidation - Acidic water ROX is the name of E-water production system. ROX generates Alkaline water and Acidic water from only tap water and salt. Both E-water can be used in food sanitation.

4 Generation principle 3 〈 REACTION 〉 [ Anode ] H 2 O → ½ O 2 + 2H + + 2e - 2Cl - → Cl 2 + 2e - Cl 2(aq) + H 2 O ⇔ HCl + HClO [ Cathode ] H 2 O + 2e - → ½ H 2 + OH - Na + + OH - → NaOH At the anode, the chlorine gas (Cl 2 ) is generated from the chlorine ion (Cl - ). The hypochlorous acid (HClO) are generated as the chlorine gas (Cl 2 ) reacts with water (H 2 O). Water (H 2 O) decomposes and becomes oxygen (O 2 ) and a hydrogen ion (H + ). As a result, pH of the water of the anode becomes 3.0 or less. And the available chlorine becomes 20-60mg. At the cathode, water (H 2 O) decomposes and becomes hydrogen (H 2 ) and hydroxyl ion (OH - ). Sodium hydroxide (NaOH) is generated by sodium ion (Na + ) and hydroxyl ion (OH - ).

5 Substances contained in acidic E-water Chlorine changes its existence form depending on the pH of the solution. As the pH of acidic E-water is around 3.0, it consists 85% hypochlorous acid ( HClO) and 15% chlorine gas (Cl 2 ). In contrast, sodium hypochlorite (ClO -, hypochlorite ion) widely used in the market has a pH of around HClO in acidic E-water sterilize approx 80 times faster than sodium hypochlorite solution of the same concentration. pH Cl 2 ClO - HClO Existence rate (%) Acidic E-waterSodium Hypochlorite (diluted) The existence form of chlorine 4

6 Substances contained in alkaline E-water Alkaline E-water contains as an active ingredient a small amount of sodium hydroxide (NaOH) capable of dissolving proteins and emulsifying oil and fats. It is also useful for neutralization following disinfecting with acidic E-water. 7 To prevent food poisoning If you will use E-water, it is easy to disinfect utensils, equipment and ingredients diligently, because E-water is safe. It is effective on most bacteria and viruses. 9 Fryer Please drain the oil. Next, collect warm alkaline water, then wipe with sponge. Fryer will be cleaned easily. Alkaline Tableware Mix alkaline water and hot water in pre-wash sink. Add detergent about 1/3 vs. regular usage. Will be clean and detergent can be saved. Alkaline SUSHI bar If E-water is used, plain wood counter is not damage. Alkaline Rubbish Acidic Flush the liquid that comes out of rubbish with acidic water. Bad smells are removed, and pests don't approach. Tables, Seats After wiping, it is fresh. When we are busy, can easily clean it. Alkaline TATAMI-mat Alkaline water can clean cigarette's tar. We don’t worry because chemical doesn’t remain. 10 Seafood For disinfection of surface. It is effective also for “Vibrio”. Shellfish It is effective also for “Norovirus”. Vegetables We can disinfect it quickly, and not reduce the nutritional value of the ingredients. It was approved by the Ministry of Health, Labour and Welfare in June, 2002.

14 Comparison with other disinfectants Sodium hypochlorite ‘bleach’ ・ It can’t be used during cooking because of the strong residue. 〈 The smell and slimy feeling remains. 〉 ・ Undiluted solution almost doesn’t have disinfection power. 〈 It takes time to dilute. 〉 ・ The processing time is long. ・ When it touches clothes, it makes decolorization. Ethanol ・ It is expensive. ・ When surface is wet it doesn’t have disinfection power. ・ It is damaging to skin. E-water ・ It can be used easily during cooking because it has no residue. ・ Running cost is cheap and it can be used like a tap water. ・ Disinfection time is fast it needs just 15sec. ・ It is safe to human body and environment. 13
