1 Peanut Butter Cookie OJT Temesha Hammond Walden University EIDT 4004 Dr. Amy Peterson

2 Introduction Welcome to peanut butter cookie OJT. The purpose for this training is to improve the quality and the processes for baking the peanut butter cookies. You will watch a demonstration on the proper way to make the peanut butter cookies from an expert. Afterwards, you will be provided with job aids on sanitation, a recipe, and a checklist with important reminders/tips. You will then perform the tasks at your work stations from start to finish while being observed.

3 Objectives At the end of the training trainees will be able to produce quality, good tasting peanut butter cookie Trainees will be able to bake the cookies without burning them Trainees will be able determine when baking is complete By the end of this course trainees will properly measure ingredients. Trainees will be able to bake cookies without them blending into each other.

4 Ingredients (Yields 8 dozen cookies) 6 cups of sugar 6 cups of dark brown sugar 6 cups of butter 6 cups of peanut butter 6 eggs 8 cups of flour 4 ½ teaspoons of baking soda 6 teaspoons of baking powder 1 cup of salt Peanut Butter Cookie Recipe

5 Baking Instructions. You may start these instructions after following sanitizing your workstation first (refer to job aid to be posted at station). Mix butter in mixer until creamy, approximately 7 minutes. Slowly add both the white and brown sugar to the butter. Next, mix the peanut butter and eggs one at a time

6 Baking Instructions Mix all dry ingredients together. Then slowly, add 2 cups mixture to the peanut butter mixture. Repeat this step until all of the dry mixture is encorporated. Continue to mix until the mixture appears to be smooth and there are no traces of dry mixture left over.

7 Baking Instructions Allow mixture to chill for 1 hour in the refrigerator. Preheat oven to 375 degrees Remove mixture from refrigerator. Take the cookie measurerand shape cookies into 1 ½ inch balls. Cookies should be spaced 1 inch apart. Flaten the cookies with the fork.

8 Baking Instructions Place the cookies in the oven for approximately 9 to 10 minutes. Baking times can vary, therefore, cookies have to be monitored closely. Allow cookies to cool for 1 hour before sending them for packaging.

9 Safety and Cleanup Be sure to turn off oven when done Properly sanitzie workstations with kitchen sanitizer Take all dirty utensils and bowls to the dishwasher

10 Quick Tips Pat down the ingredients with a knife or spatula in the measuring cups for accurate measurements. space cookies 1.5 inches from each other. Your index and middle finger can be your guide. Baking times vary, so use your sense of smell to remind you to check the cookies.

11 Observation Evaluation Please go to your workstations and perform the following tasks. 1.Clean and prepare workstation 2.Refer to peanut butter cookie recipe and follow baking instructions. 3. Refer to Safety and Cleanup job aid and follow instructions.
