Air DRYDevice for rapid drying of the chamber, to evacuate the excess of moisture necessary for most of pastries but also the production of dried products. Auto Cool‘In HOLD+ Rapid cooling down device to stop cooking process, and cool the chamber to a low temperature. Accessible at any time in manual mode to choose an automatic cooling after cooking (preset temperature), it is a fully programmable mode in AutoMod. Cool Down & Hold Modes are combined to allow to maintain the product at the right temperature, at the end of cooking cycle (An Adjustable preset temperature). The process avoids drying products, with a special process without ventilation.
