a. Started daily vegetarian buffet for 800+ guests. b. F&B GSI increased from 72% to 89% in 4 months. Colombia - Petecuy hotel: a. “live fish” tank, in first 6 months sold 2 years projections. b. increased restaurant Avg. Chk. by 40%, - country’s highest! Ecuador - Gran hotel Atahualpa: a. Created first Catering services in town. b. Table side cooking & wine menu, increased 120% F&B sales.

FANTASY ISLAND Beach Resort Dive & Marina, Roatan Island, Honduras General Manager Staff: * Link 120 rooms, 3 restaurants, 2 beach bars, EP, and AI packages. Worldwide deluxe diver’s destination, annual fishing tournament. Developed staff training modules and retraining program. Implemented annual budget, reports recipes and food controls. Set-up new accounting standards and Improved P&L monthly reports. Started new restaurant, food festivals and full Prep area for all kitchens. Developed market segments and new feeders in South America & Europe.

Responsible for FF&E selection, receiving and testing. Received the hotel buildings from the construction company. Conducted staff recruiting, hiring and personally training. Implemented corporate SOP’s. Developed the annual budget. Started Marketing Plan and Sales in Europe, South America.
